Decadent Chewy Cherry-Almond Trail Bars

1 c dried sour cherries
1 c slivered almonds
3/4 c non-sweetened shredded coconut
1/2 cup mini white chocolate chips
1/2 tsp sea salt
2 c rolled oats
1/2 c coconut oil
1/2 c light amber honey

Line an 11x13 baking pan with parchment paper to cover the bottom and sides. Mix the cherries, almonds, coconut, chips, sea salt and oats in a large bowl to combine and set aside. Next, bring the oil and honey to a boil in a small saucepan until it foams. Let it cook for 20 seconds after the foaming begins. Pour it over the mix in the bowl and combine thoroughly before dumping it into the parchment lined pan. Spread the mix out evenly to all ends of the pan and cover before putting it in the fridge to cool. Let it cool for an hour or so, then chop down however you like whether it's small squares or standard trail bar-shaped rectangles. 

Makes 20 bars.
